It is 37% abv, thus it is spirit and not wine (the Chinese word 酒 is confusing) Spirit will not develop further after bottling.

In fact, a university in LA had join with a winery in Napa to test aging wine under water and they claim the result is good. Of course this is still at an very early stage.
